The wines, which bear the name of the Sauternes region, are made of semillion and sauvignon blanc with a mandatory part of the grapes that are attacked by noble mold. The mold is from the botrytis family, so wines are often called botrytic. This mold dehydrates the berries and thus concentrates the sugars. It also adds aromas reminiscent of homemade orange and mandarin jams. The skill is to predict the sweetness of the wine and adjust the fruit acids to it. Duties around acids fall on the shoulders of sauvignon, and fullness, body, and honey and smoke aromas fall on the shoulders of semillion.
