The grapes for this rosécome from the vineyard of the Chateau d'Esclans winery, from the lowest altitudes. The vines are among the younger ones, primarily grenache and vermentino, with some syrah. Harvesting takes place from sunrise to noon. After careful screening, sorting, and destemming, light mulching at 7-8 ° C is followed to avoid oxidation. Vinification includes only the best grape juice, free-run juice, and the first light pressing. There is no maceration in order to achieve the typical Provencal color, and the vinification process itself combines different approaches. Fermentation and maturation of the wine take place partly in stainless steel, while the other part goes in 600 L French oak barrels, and both is temperature controlled. This method of production successfully retains delicate primary floral and fruity aromas with more pronounced creaminess and complexity.
