  • It will pair very nicely with traditional Capri cuisine. It goes amazingly well with shellfish carpaccio or sea bass sashimi. Out of meat dishes chose duck or young partridge in sauce and herbs, or rabbit with lemon sauce. It goes well with grilled or slightly spicy food.

In terms of climate, 2003 was a very special in the Champagne region. After a harsh and dry winter, low temperatures and the frost in the spring caused the loss of as much as 70% of Chardonnay, followed by unbearable heat in the summer which led to the earliest harvest in the history after 1822. Even though the yields were reduced, grapes were extremely healthy, of optimal ripeness and full of extract. Even then, it was clear that it would be a vintage to remember. However, it took a lot of courage, innovation and self-confidence to achieve such a top product. For the first time ever, grape juice was left to oxidize in the press, and the ratio of Pinot Noir was raised to unprecedented levels, in order to perfectly balance the atypical Chardonnay.

On the nose P2 2003 reveals gradually and in spiral. Delicate lime tree aromas turn into grey ashy minerality, followed by dried apricots and candied figs. The freshness of lemon verbena and white pepper is intertwined with rosemary and liquorice root. It also has an insolent and vibrant freshness on the palate, and compared to 2003, a prolonged elegant bitterness. It has a long-lasting taste with accentuated characteristic minerality which adds new dimensions to the palate.
