Degrassi's Cabernet Franc comes from the best wine-growing area of ​​Bujština – Contarini-Brazzania. The yield per hectare is reduced which results with a very high quality of grapes. Also, specific microclimate of the region and the minerality of the Istrian white earth give extra influence on the overall product.
This wine, like all others from the Degrassi cellar, is given a lot of time and attention. During the production, malolactic fermentation and maturation take place in small oak barrels for 24 months. After blending, the wine is aged in a large barrel for one year and 6 months in the bottle, during which becomes more rounded and mature.
The wine needs to be decanted in order to show all its splendour. The dark ruby ​​colour already indicates the richness of smell and taste. At the beginning, vegetal and mineral aromas, such as green bell pepper, pepper and herbs, are more noticeable. After opening, sweet spices such as vanilla and carob, as well as fruitiness - fresh and dried red and black berries, currants and plums – are more perceptible. More experienced noses and palates will also sense aromas such as leather and game. In the mouth, softness, warmth, juiciness and tastiness are felt. Long aging resulted with delicate and refined tannins. The finish is really long and calls for another sip.
