It goes well with aromatic red meat dishes. Interesting when combined with goat meat in blueberry sauce. Due to the rich texture of the wine, it is enough to serve it only with quality local prosciutto.

When it comes to the merlot variety, we stick to the old wine processing and cultivation methods from the Vipava Valley. The essence of good wine is the vineyard and everything that comes with it. The cellar is a peaceful peace where the must ripens into wine. We have observed the following paradox: the less the cellarman is present, the cleaner and smoother the maturation, while the opposite is true in the vineyard. The vine needs abundant sun and a little shade. However, the only shade that is welcomed is the human shadow. The grapes are thinned in August. In early October, during preharvest, 5% of merlot is harvested in order to prepare its own yeasts. Select merlot harvesting starts in late October. The grapes were macerated for 30 days using their own yeasts from the grapes harvested during pre-harvest. The must was poured with its fine lees into Slovenian oak barrels where the wine developed its elegance without the winemaker’s touch. In the meantime, the wine went through biological acidification. The wine was bottled during a full moon, which soothes the wine and sends it on a long and wonderful journey.
