The selected žilavka grapes, after cooling and selecting the best clusters, were pressed in three different ways following our philosophy to extract the best characteristics from different vineyards. These three ways are: pressing whole grapes, pressing whole grape berries, cold maceration for 12h before pressing. After decanting the clear musts, they went to controlled fermentation at 10-18°C, 75% in stainless steel and 25% in new wooden barrels: specially processed, light burnt 500-liter tonneaux Nadalie Perle Blanche Fruity were selected for their unobtrusive fine aromas and tannins. After fermentation, the aging and weekly stirring of the fine yeast lees in stainless steel and wooden barrels continue for 6 months, after which the wines are blended and aged for 3 more months without stirring until bottling. Golden yellow in the glass and more ripe on the nose, sweeter and fruity with a very pleasant hints of vanilla. It seems fuller on the nose, but also softer and well-rounded. Harmonious with a supple texture and fuller but leaner body with blended alcohols and acids and a subtle influence of wood. Extremely sophisticated wine from the žilavka variety from a good vintage, which is discreetly rounded with wood and a striking texture, indicating its full potential in the years to come. Serve immediately or in 4 to 5 years.
