The main and only variety is Sauvignon Blanc, from both shores and although the soil is very similar with the exception of slightly more gravel on the Sancerre side, it is interesting to compare the styles of these two Sauvignons. Pouilly Fume is facing west and gets more warm, afternoon sun so it has a dose of maturity more than Sancerre. Also, the morning is longer in the shade and the berries in the shade of the cold stay longer on the night work of metabolism. Sometimes it acts like a Sancerre from warmer years. maturity and minerality.
