Ottocento white is also a macerate in which the juice ferments in contact with the skins in large wooden barrels. Malolactics round off the acids and although they are quite sufficient in quantity, the wine seems softer and milder in the mouth. It matures in large wooden barrels, which adds to the aroma of oak, and has a gray pinot to give thanks to its color. It consists of malvasia, sauvignon blanc and pinot gris. Eco certification, natural growing and healthy grapes are the most important prerequisites for these types of wine.
