The wine is straw yellow with greenish tones. A fresh and fruity scent (citrus - grapefruit, lemon + green apple, acacia) with moderate herbal notes. Solid body, full, with a slightly more pronounced minerality. Pleasant in the mouth with rounded acids that give a pleasant freshness. In the aftertaste a mild and pleasant bitter taste of almonds. Recognizable varietal features, original and very smooth. Vinification: Careful mulching of grapes, separation of stems. Use of dry ice in maceration. Cold maceration for 24 h at 10-12 Â°C. Pressing, fermentation in controlled conditions, at temperature of 14.5 Â°C. After fermenting the âsur lieâ and âbÃ¢tonnageâ methods, 25% of the wines goes through malolactic fermentation (MLF), cultivating the wine on its own yeasts, followed by bottling.
