Don't let the minimalist label fool you, this is a very interesting sauvignon. Hand-picked grapes from the vine with reduced yield.Â Only 1200 bottles produced. A small amount is vinified as a short macerate, which means the skin and the juice are in contact during fermentation. Most fermentations happen in stainless steel. The wine is rich in green, herbal and grassy aromas. The wine has a nice acid-based texture so you would never guess how much residual sugar it has. Expertly balanced and a bit special.
