Tilia Pinot noir Estate
Vipavska dolina, Slovenia
Tilia’s pinot noir is not a Burgundy type wine. Vinification proceeds deliberately in the direction of full and concentrated pinot noir, which is seen in its high alcohol content of 14.5, which isn’t typical of pinot noir. Some of the juice is removed before maceration to concentrate the tannins, color and fruity aromas. It undergoes stimulated MLF maceration, spends 18 months in a combination of French oak and Slavonian oak, and then settles on fine lees for six months with stirring. It is full of ripe fruit, jam-like fruity aromas, sweet-spiced oak barrel aromas, lightly smoky and earthy.
