Valentino is a wine made from dried grapes of pinella and rebula varieties. The grapes are harvested by hand in mid-October and only during very good years, then harvested in wooden crates and dried in a dry and well-ventilated attic until April. After the grapes have dried well, each cluster is re-examined and pressed, yielding 1l of Valentine from 27 kg of grapes. The wine is then matured in Slovenian oak barrels for a year and a half to four years, after which it is ready for market.
