Pinot gris is one of the varieties deemed by the industry as the â€typecast’ of the wine world - simple, smooth, approachable and affordable. A crowd-pleaser for friends who aren’t necessarily wine connoisseurs. However, the variety itself is actually wonderful and well--suited for exceptional wines and the role of a lifetime. This is what we appreciate in smaller wine houses from Slovenia. They resist the stigma of pinot gris as a boring and unremarkable wine. We especially appreciate the successful work of biodynamics experts who actually value pinot gris as a potent and noble variety and who recognize its potential. In good years, aging will greatly enhance pinot gris. These are some of the reasons why we offer Tilia Pinot gris in our portfolio. During the production process, it is ensured that the grape berries are not damaged before pressing - they are crushed and pressed at the same time. After fermentation, active bâtonnage (aging on yeasts with stirring) proceeds for four months.
