From the excitement for the new vintage, and the hustle and bustle of emptying crates to the quiet depths of the cellar, the grapes go through their natural journey. The production process is designed to respect gravity, from the removal of stems and the maturing on the grape skin to the silence of the lowest levels of the cellar with the 200,000-liter capacity.
In the cellar, many wines are aged for years until they are fully ready to be enjoyed. Modern equipment and technology provide the wine with perfect conditions for aging.
At the Petrač winery, special attention is paid to preserving the primary aromas of each variety, which is why the wines are fermented in conditions of controlled temperature. All the wines are macerated, while the red wines undergo malolactic fermentation and are aged in large wooden barrels.
