Damoli Giago Valpolicella Ripasso reflects an ancient production method („ripasso“).
The grapes are harvested by hand in October, and they are used to produce the Valpolicella Classico wine, which then rests in steel tanks. Afterwards the Valpolicella Classico wine is pumped in another steel tank where the pomace from Amarone production is left, and where a second fermentation takes place. The method "ripasso" gives to the wine greather structure and roundness and lower acidity. The wine then ages about 3 years into small old french barrels.
Damoli Giago Valpolicella Ripasso has a ruby red colour. It is fruity with lots of ripe fruits and spicy flavours. On the palate it is dry, warm, bodied, with rounded tannins perfect blended with ripe red cherry and plum tastes.
