One of the best DOC Prosecco wines, Il Fresco is made of 85% glera, while the rest is filled by chardonnay and pinot gris. Whole clusters go through gentle pressing and fermentation at a controlled temperature, and when they reach the predicted 11% of alcohol and 14g of residual sugar, the fermentation is stopped by cooling, while the prosecco stays on yeasts for 2 months. Aromas of yellow apples and honeysuckle on the nose, while stone fruits predominate in the mouth.
