In 2011, Chateau Cheval Blanc, despite the fact that its vineyards are located around Saint Emilion and typically are planted with Merlot, it had in the blend more Cabernet Sauvignon. This vintage from 2021 is its heir. With 52% Cabernet Savignon and 43% Merlot, the wine also has 5% Cabernet Franc. Deep ruby red in color, it opens with floral aromas of lilacs and violets. Floral notes are well paired with aromas of red and black berry fruits such as raspberries, red and black currants, blackberries and cherries. Later, fruity aromas are replaced by notes of fresh oak, chocolate, dried herbs and damp floor. On the palate, it is fresh with light, slightly powder and smooth tannins. The fruity aromas of berries are complemented by notes of cocoa, liquorice and sweet spices. Medium to full body with a long-lasting finish followed by aromas of rose.
