This elegant white wine from the Entre-Deux-Mers appellation is produced in the heart of the Saint-Genès-de-Lombaud wine-growing region. The vineyard covers 10 hectares on a distinctive soil composed of boulbène (sandy-clay with stones), clay, and limestone, imparting pronounced freshness and minerality to the wine. The vines are planted at a density of 5,000 per hectare, with an average age of 35 years, contributing to the wine’s complexity and balance. The grape composition is 70% Sauvignon Blanc, 25% Sémillon, and 5% Muscadelle, achieving a harmonious blend of aromatic intensity, richness, and elegance. Annual production is approximately 50,000 bottles. The winemaking process begins with careful parcel-by-parcel grape selection, followed by total destemming. Maceration lasts 15 hours, and fermentation continues for about three weeks at a controlled temperature of around 15°C, preserving the wine’s freshness and aromatic profile. Prior to fining, trials are conducted to ensure optimal stability and clarity. The wine is aged on fine lees for two months, further enhancing its texture and complexity. The result is a fresh, elegant, and well-balanced wine with expressive aromas.
