Cotes de Nuits Cuvee K - the Vergy "climat" in a very affordable bottle. The art of winemaking in Burgundy will always impress and should simply be indulged in. Pinot noir comes from loessial and limestone soils and 40 year old vines. The fact that the French are not necessarily traditionalists is proven by the three-day cold maceration (12 degrees for red wines), which is rare when it comes to red wines. Removing the stems further reduces the tannins in this low-tannic variety. The free-run juice ferments separately, and the entire quantity of the product goes through full malolactic fermentation in 30% new oak barrels. A very soft and fruity wine that is slightly fuller than the usual Burgundy.
