Ottocento Red is a blend of refosco and merlot from the prized Istrian white soil. Red blend from white earth. It's pretty dry so the great thing is that the winemaker decided to lower the acid a little. It ferments at the usually higher temperature of organic wines and stays in contact with the grape skins for a long time. During this time it is stirred three times a day and finally pressed and aged in large wooden barrels 1000 - 2500l. Merlot does a great job of softening and rounding the angular edges of naturally sour refosco, which again enriches the wine with aromas of wild, forest berry.
