Vignaquadra Pecorino is a fresh and versatile wine made from 100% Pecorino, and ancient local variety brought brought back to the fore in the last 15 years.
After destemming, 48 h follows a long cryomaceration on skins. Pressing and fermentation occur at controlled temperature. About 20 percent of the must is fermented in barrels and is later aged for a few months in wood. The remaining part is left in steel.
Bright golden with green reflections. The nose recalls a beautiful floral of freesias and mimosas, ripe fruity touches of peach, apricot and tropical hints, woody accent, closing with citrus and vegetal hints. Well-structured wine with good acidity, sapid and persistent. Excellently balanced.
