We recommend it with seafood delicacies such as caviar, bluefin tuna sushi, sea urchin, king crab, or lobster. It will go amazingly well with battered fish or meat with a little acidity, such as lamb chops or steak tartare. Try it with dark chocolate and tropical fruit desserts.

For Dom Pérignon Vintage, only the best grapes from the most exceptional years are used – their new vintage 2015 edition is no exception. With fruity and floral notes, and an impressive almost 10 years of maturation on the lees in the darkness of the cellar, it is characterized by a tactility and mouthfeel that is clear and persistent, full and delicate, and extremely long-lasting.
The vintage 2015 in the Champagne vineyards was extremely contrasting, atypical, even a bit confusing. An entirely mild, average winter and cold spring, followed by an extremely long period of unprecedented drought, extreme temperatures, and bright sunshine. August 2015 was the warmest August in the region in the last 45 years. Pinot Noir was harvested unusually early, but very powerful and fruity, full of fruit, very generous and structured. On the other hand, the chardonnay harvest, due to the drought, was very uneven and required strict sorting and screening.
Dom PĂ©rignon 2015 is a unique combination that is as stimulating as it is soothing. It is imbued with intense fruit aromas and flavors, dominated by citrus fruits and their peels, peaches, nectarines, and tropical fruits such as mangoes and pineapples. Scents of white and yellow flowers such as linden, jasmine, and peony balance smoky and roasted notes and notes of cocoa, while spices such as anise and cardamom enliven the overall experience. It is full-bodied in the mouth, with retained delicacy and a unique mineral and fruity long-lasting finish.
