Pinot noir is one of the most complex and demanding varieties in the world, thus it is number one in our winery when it comes to black grape varieties. We are immensely passionate about playing, enjoying and learning with this variety, as well as achieving top results and even experiencing some disappointments. Pinot noir is a variety that achieves best results on Mount Plešivica. The usual period of maceration is 12 to 14 days, after which pinot noir is finally fermented and left to age in the barrique barrels. Aging in a barrel on a fine lees takes 10 to 12 months. The final maturation takes place in large wooden barrels. Pinot noir is a variety that is delights with its fragrance and its smooth texture. The taste is very rich and reminiscent of sweet grapes. It is a very elegant red wine, as almost no other wine is.
