  • Despite the fact that this is a white wine, it can easily be paired with heavier dishes. It is complex enough and full-bodied. It goes well with dishes that consist of dried meats, game meat pâtés and lighter grilled meats. Stuffed veal breast or sous vide beef cheeks. We recommend adding finely chopped roasted chestnuts into the veal breast stuffing.

The fermentation and aging of chardonnay take place in barrique barrels. It has ripened on the lees for 12 months, with regular weekly stirring and raising the lees in the barrels. After a year in barrique barrels, the wine matured for another year in large wooden barrels. The wine is bottled without filtration and using sulfur dioxide, and bottled for 6 months before being released on the market. It is an old Burgundy method that we have been using with our chardonnay for years, and we take pride in being one of the first ones in Croatia to use this method of vinification. The smell of sur lie is complex, dominated by delicate hazelnut and pistachio, followed by a variety of fruit and varietal aromas, from ripe melon and figs, to butter and smoky notes. The taste is very rich, slightly spicy and long-lasting, with excellently balanced acids.
