It goes well with aromatic red meat dishes. Interesting when combined with goat meat in blueberry sauce. Due to the rich texture of the wine, it is enough to serve it only with quality local prosciutto.

Merlot is grown on eight distinct vineyard sites, each vinified separately. Larger sites are subdivided according to exposure to best express their unique characteristics. Vinification and maturation vary across vineyards, reflecting each site’s specific microclimate and soil. One year after harvest, all Merlots are blind tasted to determine the selection and proportion of wines for the Selekcija line or the top-tier Angel line. The 2021 Merlot Selection expresses the Breg, Pod Visoko, and Livišče vineyard sites. Fermentation took place on the skins until fully complete, followed by maturation in carefully selected oak barrels. After 22 months, the wine was bottled unfined and unfiltered, preserving its authenticity and natural character.
