The wine is full-bodied but not very tannic, so it will go well with long and slow-prepared red meat dishes, sauces, stews, stewed meat, sous-vide ... eg slow roast veal shank.

Tomaz Merlot is noticeably different from the Istrian merlot I tasted. Tomaz’s Merlot is a pure classic. A very recognizable varietal Merlot exactly as you imagine it when a wine full of body of that variety is made. Rich, high extracts, slightly dried aromas of plum, blackberry and mulberry fruit. After two or three sips, a typical image of aging in a merlot oak begins to develop; coffee, chocolate, vanilla and baked fruit biscuit. In the structure of the wine the age is not felt, it is still quite firm and alive. Merlot-style full body, high at the top.
