The 2021 Cabernet Franc is made primarily from the grapes from the estate’s oldest vineyard, Jazbine and with a smaller portion from the Brajda vineyard. The old vines lend depth, character, and distinct varietal expression. The grapes were hand-harvested and carefully selected and then they underwent ten days of spontaneous maceration with indigenous yeasts at natural October temperatures. The wine then matured for 24 months in 225-liter oak barrels. The first batch of Cabernet Franc was bottled unfined and unfiltered during the waning moon, preserving its natural structure and authenticity.
